Simple pleasures – a new Friday night favourite

You simply take: (serves 3)
1 ripe mango
3-4 chicken fillets
1-2 handfuls of cashew nuts

Cut the chicken in little pieces and fry it in a little oil. Spice with salt, pepper, barbecue spice mix, coriander, garlic and a little hot chilli. Add diced mango and cashew nuts when the chicken is finished. Remove the pan from the heat and put on a lid.

Ready to serve with garlic bread or pita bread after 10 minutes. Serve with a spoonful of sour cream and a leaf of coriander on the top. Bon apétit.
