
Simply take (enough for two people, weary after a long week of work, who just put the kids to bed):
- one large onion
- three of four (depending on the size) ripe tomatoes
- plenty of pine nuts
- a little oil
- garlic
- salt and pepper
Fry onion and garlic in the oil until it’s soft, add sliced tomatoes and pine nuts – and viola supper is served. If you like, start by taking some chicken from the freezer and put them in the oven half an hour in advance. Then top it off with bread (I love the taste of Naan bread – even the ones they sell in the stores, if you fry them in butter a few minutes on both sides) and a rich glass of red wine. Bon appétit!
